Yummy Blueberry Egg Scramble Recipe

blueberry scrambleI got in a good hard workout today ( I have been doing Craig Ballantyne’s Reconstruction workout and its kicking my butt!) , so I decided to have some oats for breakfast. Normally I would have an egg and veggie omelet every day for breakfast. I still wanted my eggs, but just felt like something different and since its the best time to eat oats post workout, I thought I would try out this recipe. I remembered I had a recipe for something similar and I found it in The Body Art Cookbook. I changed a few things with the recipe and added some of my own stuff and it turned out delicious!

1 whole egg

3 egg whites

1/3 cup oats

1tsp cinnamon

stevia to taste

Mix all in bowl and pour into pan. Continue to cook like scrambled eggs. Get 1/3 cup frozen blueberries and microwave until melted. When egg mixture is done, put on plate. Top with 1/3 cup plain yogurt and blueberries! Very yummy! You could also add sugar free syrup, but I really liked the yogurt and blueberry combo on mine this morning.
