Raspberry Scones
I was looking through my Elimination Diet Cookbook the other day and found this recipe for scones. I have made these before, but they have never turned out so good!
I did change the recipe a little though, by adding in some protein powder and used oat flour instead of spelt flour. This bunch turned out pretty good, the last bunch totally fell apart and just had to put them in a bowl. These are really yummy with some greek yogurt or some organic peanut butter on top!
Ingredients: (makes 12)
2 cups oat flour
1 TBSP baking powder
1/2 teaspoon salt
1/3 cup extra virgin olive oil
1/3 cup no sugar added agave nectar
1 TBSP vanilla extract
1/3 cup hot water
1 cup fresh raspberries ( I used frozen and it worked out just as good)
Preheat oven to 375. Mix flour, baking powder and salt, Stir in olive oil, agave nectar and vanilla. Stir in hot water, then raspberries. You can either scoop these onto baking sheet or pour into muffin tins (which I did). Lightly brush tops with olive oil. Bake for 20 minutes or until golden.
